What does the FSSC 22000 standard cover?

The FSSC 22000 standard defines the requirements for a certifiable food safety management system (FSMS) of an organisation. The organisation analyses and considers its customers' food safety requirements and the requirements of the applicable laws and standards (legal requirements for the industry, requirements of the standard owner etc.). These requirements include, but are not limited to:

  • Implementation of a quality and food safety management system
    Planning, implementation, assessment, corrective actions
  • Hazard assessments plus control elements
  • Preventive actions
    Resource management skills
Human resources, facilities and equipment, training
    Environmental, personal and process hygiene
    Pest monitoring and control
Suitability of packaging materials, machinery and vehicles
Correct product labelling (allergens, correctness, scope)
Systems for the evaluation of suppliers and service providers
    Measurements, analyses, improvements
On-site inspections, emergency responses and control

  • What does “certification” and/or the issue of a certification mark for FSSC 22000 by TÜV SÜD Management Service GmbH mean?
    • The customer has submitted to voluntary assessment (audit) according to defined criteria (certification standard).
    • A certificate and/or the authorisation to use a certification mark is only issued if the assessment (audit) does not reveal any major nonconformities with the requirements of the certification standard.
    • The certificates and/or certification marks are valid for a restricted period of time. Interested parties can check the validity of individual certificates in the certificate database of TÜV SÜD Management Service GmbH or the standard owner (www.fssc22000.com).
    • To maintain certificate validity, the certificate holder must annually complete an announced audit with a positive result.
    • Unannounced audits are possible in specific cases.
    • According to the standard owner's requirements, communication of certification to FSSC 22000 is restricted to B2B communication. Communication to consumers is not permitted.
  • How do we audit?
    • Document review
Review of documentation such as documented procedures, work instructions
      Inspection of recipes/formulations and specifications
      Evaluation of food labelling
      Specific traceability tests
      Evaluation of analysis results

    • On-site audit
On-site inspection of all areas of the organisation
Assessment from incoming goods inspection to outgoing goods
Checking the routes of employees and goods
Monitoring of critical parameters (including temperature, acidity)
Interviews with the employees of the organisation
Comparison of documentation with the actual processes
  • What is beyond the scope of certification according to FSSC 22000?
    • Certification according to FSSC 22000 does not constitute product certification. Certification thus does not provide any direct statements on the quality of a product or service of the certified customer. Certification according to FSSC 22000 does not mean that the organisation manufactures products or provides services of higher quality.
    • Certification according to FSSC 22000 does not ensure in each specific case that a product or service complies with customer requirements, even though this is one of the key objectives of the quality management system.
