Gherkin is a term generally used to refer to a savory pickled cucumber. Pickled variety of gherkins is very popular in Europe and USA. The industry is currently oriented to two major categories viz. preserved (preserved in vinegar, acetic acid and brine) exported in bulk and ready to eat (preserved in vinegar/brine).
